
The best part about this recipe is that it freezes well. I often make a batch of cookies and only bake 6 cookies. I measure the rest of the dough out on a paper plate and freeze for later.

2 dozen cookies ready to go in the freezer. I often will take a few out and bake before my daughter gets home from school. The smile on her face when she gets home and smells fresh baked cookies is priceless.
These cookie dough balls are also good to eat right out of the freezer. I often go to bake some cookies and find they are gone because just the cookie dough itself if irresistible at times. (Eat at your own risk, the cookie dough contains raw ingredients.)

Ingredients:
- 2 cups sugar
- 1/2 cup brown sugar
- 2 sticks butter
- 3 eggs
- 1/2 cup coconut oil
- 2 Tablespoons Vanilla
- 1 1/2 teaspoons salt
- 1 1/2 teaspoon baking soda
- 1/4 cup flax seeds
- 3 cups all purpose flour (or Kamut)
- 2 cups organic oatmeal
- 2 cups chocolate chips
- 1/4 cup shredded coconut
Directions:
- Preheat oven to 350 degrees. Place the butter in a saucepan on medium heat. Let butter melt and boil stirring occasionally. The butter will slowly start to bubble up and you will see a blooming effect once the butter starts to brown. Once the butter has bubbled up the bubbles will eventually start to dissolve. Turn off the stovetop and keep stirring so the mixture does not burn. Let mixture cool.
- Combine the sugar, coconut oil, and chilled brown butter. Mix until light and fluffy. Add vanilla and eggs. Mix just until combined.
- Combine all dry ingredients except the chocolate chips in a medium mixing bowl. Add flour mixture to the butter mixture. Mix just until combined. Add chocolate chips and fold into the cookie dough.
- Measure out the cookies with a cookie scoop and place on a lined cookie sheet.
- Bake at 350 degrees for 9-10 min depending on how big you make the cookies. I use a 2” cookie scoop to measure each cookie. I start watching the cookies at about 8 min and take out when the cookies are fluffy on top and the bottoms have a slight brown tint. The tops look like they are slightly not done but they continue to bake outside of the over for a few minutes after taking them out. Once they are cooled they are perfect.
